Independence Day is such an important day for so many. I am quite proud of my independence. It was not always the case of course, I had mentors just like you. Well, maybe not just like you. With some mentors you respect and emulate them, with others you kill them and take their place.
In a side street of Yo Town there is a bar that does the best barramundi slaw bowls in the world, well, not anymore, but it used to make them. It was owned by my first mentor. I was 16 when I used to go there. You know how they say one killer can spot another? It is true. It is not like we give off a scent or anything, but it is like finding a kindred spirit. He saw me for what I was fairly quickly, even I did not know what I was at that point. One night, a slow night, I had had a number of drinks and it got to be that I was the only customer left.
Old Joe says to me, “I’ve got something sweet in the basement that will interest you.”
I stumbled down the steps with him, we had chatted on and off for a bit while I ate his food and drank his beer. I did not see him as a threat. In the basement he opened a door and there on a piss stained cot was a tied up girl.
“Beautiful, isn’t she?”
I just stared at the girl, she looked at me through terrified eyes and she trembled. Joe put a knife in my hand and stepped out of the room closing the door behind him. I made small cuts at first, just to get a feel for it, but in no time, I had hacked her to bits.
Joe helped make me. I was going to be a banker. With my total disregard for other people’s feelings I think I would have rose swiftly in the financial sector. Joe changed that.
Years later I went back to that bar, Joe was still there serving the same barramundi bowls and he knew when I walked through that door. He knew I had come to kill him. His death was swift. The quickest and most painless death I have ever done.
I loved Joe for showing me who I really am, but sooner or later we all need our independence.
Barramundi Slaw Bowls
Serves 4
Ingredients
Olive oil cooking spray
Olive oil
Soft white wraps
280g Barramundi fillets with skin on
350g avo ranch coleslaw kit
200g sweet solanato tomatoes, halved
Small oven proof bowls
Method
Preheat oven to 180C. Turn 4x9cm bowls upside down and spray with oil. Heat wraps as per packet instructions.
Press wraps over bowls. Place on a baking tray. Bake for 8 min. Remove bowls. Turn, right-side up. Bake for 5 minutes or until golden. Cool.
Pat fish skin dry. Season. Heat 2tbs oil in a pan. Cook fish, skin-side down, for 2-3 minutes. Turn and cook for 4 minutes. When cool, flake.
Toss coleslaw with half the dressing from the kit. Fill bowls with slaw, fish and tomato, and feta from the kit. Serve with remaining dressing.
