Easter Sundae


It’s Easter. I’ve always liked Easter so I thought I would tell you about the time I picked up my Easter Sundae recipe. 


It was a few years ago now on Easter Sunday. Most of the streets were empty in the city. The occasional walker, but nothing like the hustle and bustle of a busy city day. I was renting an apartment and staring out the window at the streets below through my binoculars, when perchance I looked up and I saw them. On a balcony several floors up on the corner of the building a woman and her son were painting Easter eggs. It seemed so homely except they lived in a city. Not a good environment to raise a child. Not good for a boy at Easter.
I would have to help him.
I geared up and made my way to their building. It wasn’t hard to gain entry. Riding up in the lift I swayed in time to the music. I could tell right away which apartment was theirs; There were Easter songs coming from it. I knocked on the door. She opened it. That was stupid, she didn’t even ask why I was there until after opening the door, but by then it was too late.
I pushed her back into the apartment and pushed the door closed behind me. She was shouting words at me, but I heard nothing. The kid ran into the room to see what was going on. He stood there in shock, watching me as I held his mother from behind. One arm around her chest, my other hand over her mouth.
I whispered in her ear, “say goodbye to your son.”
I released her mouth and unsheathed the dagger at my side while she said her last words. The boy watched as I slit her throat. He didn’t scream, didn’t run. There was no where to run, I would have found him anywhere if I wanted. I wiped my blade on his mother’s dress before letting her fall to the floor. Discarded waste.
“What’s your best Easter recipe, boy?”
The boy swallowed, eyes wide with fear he walked slowly to the kitchen and pointed to a book. I followed.
“Open it. Find the one.”
He did as I asked, I told him, “Rip out the page and give it me.”
He did. I put it in my pocket and pulled out an Easter egg, threw it to the boy.
“Happy Easter.”
I left knowing next year he wouldn’t be cooped up in that shitty little apartment for Easter. I helped him.

Easter Sundae

Ingredients

80g white chocolate
Pink food coloring
460g vanilla sponge cakes unfilled
2 tbs icing sugar
3 large bananas, peeled, sliced
250g strawberries, hulled, sliced
125g blueberries
Hot cross bun flavored ice cream /vanilla honey flavoured ice cream
¼ cup slivered almonds, toasted

Choc fudge sauce

300 ml thickened cream
20g unsalted butter
¼ cup golden syrup
2 tbs brown sugar
1 tbs cocoa
100g dark chocolate chopped.

Method

1. Draw bunny ears on baking paper and place on a flat tray. Melt white chocolate in a microwave safe bowl on 50% power for 30 seconds. Spoon over paper, spreading to form the outer ear, leaving centers bare. Chill until almost set. Add 2-3 drops of food coloring to the remaining chocolate and combine until pale pink. Spoon into the center of the ears. Chill until set.

2. To make the choc fudge sauce, place ½ cup of cream, butter, syrup, sugar and cocoa into a small saucepan.  Whisk over medium heat until smooth and combined. Increase heat to medium high and bring to a simmer. Remove from heat, add chocolate and stir until melted. Cool. Whip remaining cream until soft peaks form. Chill.

3. Preheat oven grill to high. Line a large baking tray with baking paper. Cut one sponge layer (bin the rest) into 2cm wide strips. Lie the strips, cut sides facing up, close together on the tray. Sift over half the icing sugar. Turn slices over and dust with remaining sugar. Grill for two minutes on each side. Remove from grill and cool. 

4. Break sponge strips into chunks and layer into a large glass bowl with fruit, ice cream and some choc fudge sauce. To serve, top with whipped cream, drizzle over sauce, scatter over almonds and arrange bunny ears.
